Gather fresh ingredients on a working organic farm. Prepare a delicious healthy lunch with a local chef whilst tasting the local wines.
Tabby Robertshaw and Alex Chouler are the owners of Graze restaurant in Stanford, which is open for only three sittings a week. The rest of the time they are farmers – planting, growing, harvesting, foraging, and collecting seeds for the food which they will serve. They practice sustainable organic farming, planting seasonal fruit and vegetables and raising free-range, hormone-free chickens, ducks, rabbits and pigs.
Tabby spends considerable time preparing food the old fashioned, authentic way which requires time: Fermenting vegetables, making kefir, marinating meat in curry spices, brewing rhubarb and honey champagne, collecting honey, baking patisserie and bread, making smoked charcuterie, canning excess fruit and vegetables, as well as foraging for wild mushrooms or seaweed and mussels from the rock pools. Everyday has a new and exciting view, which is a perfect reflection of Tabby’s personality. She’s exciting, excitable and full of boundless enthusiasm and energy.
Come and enjoy a morning and lunch with wonderful Tabby, doing what she does best: Running an organic sustainable farm/restaurant. As part of Tabby’s team for the day, you will participate in farming or collecting or foraging for ingredients (whatever is seasonally appropriate). You will then proceed to the restaurant kitchen to prepare the ingredients and create some wonderful dishes for lunch. You will eat the delicious, fresh and healthy lunch in the charming Graze restaurant with all its old fashioned kitchen gadgets. Your lunch will be accompanied by a wine tasting from Lomond Wine Estate, which is a local award winning winery situated just outside Gansbaai.
Experiences will depend on the seasons. They may include harvesting fruit and vegetables, foraging, curing meat, fermentation techniques, pasta making, cheese making, baking. Details of the program can be established at the time of booking.
